Ingredients

200gchicken breast fillets
or thigh, sliced into 2.5x0.6 cm pieces
¼ tspgarlic powder
onion powder
cooking salt
black pepper
1 Tbspcooking salt
180gfettuccine
or other long pasta of choice
30gunsalted butter
cut into 2 cm cubes
¼ cupbutton mushrooms
sliced 5 mm thick
⅛ tspcooking salt
black pepper
1garlic clove
minced
¼ cupchardonnay wine
¾ cupthickened cream
½ cupparmesan
finely grated

Instructions
Step 1
Cook pasta in salted water according to the package instructions until al dente. Reserve some pasta cooking water and drain the pasta.
Step 2
Season the chicken with garlic powder, onion powder, cooking salt, and black pepper.
Step 3
Heat butter in a pan over medium heat. Add chicken and cook until browned and cooked through.
Step 4
Add mushrooms, cooking salt, black pepper, and garlic to the pan. Cook until mushrooms are golden and soft.
Step 5
Pour in the chardonnay and let it simmer until reduced by half.
Step 6
Add thickened cream and let simmer until the sauce thickens slightly.
Step 7
Stir in parmesan until melted and combined.
Step 8
Add cooked pasta to the sauce, tossing to coat. If needed, adjust the consistency with reserved pasta water.
Step 9
Serve immediately, garnished with extra parmesan and chives or parsley.
