Instructions
Step 1
Pre heat oven to 180°C (fan forced) or 195 °C (Convection) and line a muffin tray with patty pans.
Step 2
In a bowl mix almond flour, baking powder and allulose (or sweetener of choice).
Step 3
I used a nutribullet but you could use any food processor or blender to process the eggs, cottage cheese and vanilla until smooth.
Step 4
Combine almond flour and the cottage cheese blend until smooth.
Step 5
Add the choc chips and mix.
Step 6
Spoon the mix into the prepared muffin tray.
Step 7
Cook in the middle rack of the oven for 20 - 30 mins. I almost burnt mine and so I would keep an eye on them the first time you make them.
