Feta & Cranberry Chickpea Salad with a Maple Vinaigrette
A refreshing salad with chickpeas, feta, cranberries, and herbs, dressed in a lemon vinaigrette. Perfect for a light meal or side dish.

1 x 15 ozcan chickpeas
drained and rinsed
dried cranberries
red onion
finely chopped, optional
crumbled feta cheese
Grains
Baby Spinach
finally chopped
6 Tbspextra virgin olive oil
dressing
4 TbspRed Wine Vinegar
dressing
3 TbspMaple Syrup
dressing
½ cupFeta Cheese
blend into dressing
2 TbspDijon Mustard
dressing
2 clovegarlic
small, minced, dressing
Salt

black pepper
Instructions
Step 1
Whisk olive oil, lemon juice, optional honey, Dijon, garlic, salt, and pepper until emulsified.
Step 2
In a large bowl, combine chickpeas, feta, cranberries, red onion, herbs, and optional cucumber.
Step 3
Pour vinaigrette over salad and toss gently.
Step 4
Let sit 10-15 minutes before serving chilled or at room temperature.
