Ingredients

6slices bread
high-quality, Sourdough or Italian bread recommended
150gSoft Goat Cheese
Chèvre style is best for spreading
100gGoiabada Cascão
Artisanal guava paste, cut into thin slices or small cubes
50gAlmonds
Sliced
Extra Virgin Olive Oil
for toasting the bread
fresh thyme leaves
for garnish
lemon
salt
black pepper
Instructions
Step 1
Preheat your oven to 200°C (400°F). Drizzle a little olive oil over the bread slices and place them on a baking tray. Toast them in the oven for about 3–5 minutes until they are golden and slightly crisp on the edges
Step 2
Brown the almond slices in a frying pan or in the oven
Step 3
Remove the bread from the oven. Spread a generous amount of goat cheese over the bread, season with thyme leaves, salt and pepper
Step 4
Cut the guava paste into small cubes, transfer to a bowl and season with olive oil, lemon zest, a little lemon juice, salt and pepper and then arrange over the cheese
Step 5
Optional: Return the bruschettas to the oven for another 3–5 minutes. You want the cheese to soften and the goiabada to become slightly glossy and "melted," and the almonds to turn a light golden brown
Step 6
Finish with the sliced almonds, a drizzle of olive oil and more black pepper, if desired.
