for the chicken
450gboneless chicken thigh
salt
to taste
1 Tbspred chili powder
smoked
1 tspblack pepper
½ tspred chili powder
1 Tbspgarlic powder
1 tsponion powder
2 Tbspoil
2 Tbspbutter
clarified but normal works just fine
cajun seasoning
½ cupwater
4 Tbspcream cheese
for the salsa
1yellow onion
finely diced
2tomato
seeded and diced
1jalapeño
seeded and diced
1 Tbspcilantro
chopped
salt
to taste
1 Tbsplime juice
to assemble
Instructions

Step 1
In a bowl add chicken and seasonings. Drizzle oil and mix well to combine.
Step 2
In a pan heat clarified butter on medium low heat, once the butter is melted add chicken and cook on medium low heat for 5-6 min flipping side in between. Add water cover and cook until the chicken is fully cooked through. (about 10-12 minutes) then add cream cheese. Mix until creamy and well combined. Remove from heat and set aside.

Step 3
Make salsa by mixing onions, tomatoes, jalapeño, salt, lime juice and cilantro in a mixing bowl.

In a pan add some oil on medium heat. add some cajun seasoning to the oil and add tortilla. Top it with cheese, add shredded chicken and some cilantro . Once they are crispy and golden from bottom fold to close. Serve with salsa.
