Ingredients

3chicken breasts
400mltin of reduced-fat coconut milk
1 Tbspcurry powder
1red chilli
sliced, with seeds
2 Tbspsoy sauce
1mango
large, peeled and chopped
1lime
juice of, plus extra to serve
1 Tbspcornflour
mixed to a paste with 7 tbsp water
1 Tbspmango chutney
1onion
sliced
1yellow pepper
sliced
4garlic cloves
chopped
salt
to taste
pepper
to taste
2.5 c mfresh ginger
grated
Instructions
Step 1
Place all the ingredients, except the yellow pepper, in a slow cooker, stir and season to taste.
Step 2
Cook on high for 3 hours or low for 7 hours.
Step 3
Add the yellow pepper and cook for another 15 minutes.
