Instructions
Step 1
Cook the noodles in boiling water for 4 minutes until slightly firm to the bite, then drain, finely chop the green onion, ginger, and garlic, and slice the mushrooms thinly.
Step 2
Heat olive oil in a pan and cook the ginger, garlic, and mushrooms over medium heat until the liquid released by the mushrooms has evaporated, then set the mixture aside.
Step 3
In a bowl mix together soy sauce, mirin, honey, and rice vinegar.
Step 4
In the same pan heat olive oil and sesame oil, cook the ground beef while stirring until browned, and season with salt and pepper.
Step 5
Add the previously cooked mushroom mixture back to the pan, then add the noodles and sauce mixture, cook over high heat for 3–4 minutes until the sauce starts to caramelize, and finally stir in the green onion.
Step 6
Divide the noodle stir-fry onto plates and serve.
