Creamy Herb chicken & Basmati Rice

Instructions

Step 1
Rinse rice till water runs clear. In saucepan, add rice, salt, butter, water. Bring to boil. Then lower heat, cover & simmer for 15 mins or until water is gone. Removed from heat, let sit, covered for 5 mins. Fluff with a fork.
Step 2
Season chicken with salt, pepper, paprika & herbs. Over medium heat, add chicken to olive oil & butter. Cook till golden brown. Set aside on a plate.
Step 3
In same pan, lower heat to medium, add onion & garlic, stir for 30 sec. Pour in chicken broth & bring to simmer, let it reduce for 2-3 mins. Stir in heavy cream & parmesan, let it simmer for 3-4 mins. Add basil, parsley. Squeeze in lemon juice & stir.
Step 4
Return chicken to pan, spoon sauce over. Season to taste. Serve over rice.
