Instructions

Step 1
1. Preheat the oven to 200°C.

2. Add the chicken mince to a large bowl along with the oats, egg, panko and garlic, and season to taste with salt and pepper. Use your hands to thoroughly mix the mixture until all ingredients are evenly combined.

3. Break off a portion of the meat mixture with your fingers and roll it between your palms into a smooth meatball. Place on a baking sheet lined with parchment paper and repeat for the remaining mixture.

4. Bake the meatballs in the oven for 15-20 minutes until golden brown.

5. Meanwhile, make the teriyaki sauce by adding the soy sauce, water, maple syrup, ginger, garlic to a non-stick pan over medium heat. Stir continuously until all ingredients are combined and heated throughout. Then add a dash of water to the cornstarch to create a slurry and mix that into the sauce. Let simmer until the sauce has thickened, making sure to stir continuously in order to keep the sauce moving.

6. Once cooked, remove the meatballs from the oven and carefully add them to the pan with the teriyaki sauce. Stir to coat and then turn off the heat.

7. Add the broccoli, rice, and a portion of meatballs to your meal prep containers. Garnish with sesame seeds and chopped spring onions.
