Instructions
Step 1
Heat oil in a pan over medium heat. Pour in eggs and season.
Step 2
In a small bowl, mash the avocado using a fork. Add in onion, tomato and lime juice. Mix together and season.
Step 3
Once bottom of the omelette is cooked, flip over to cook the other side. Remove from the pan and slide onto a plate.
Step 4
Over one half of the omelette spread the peanut butter. Then top with the smashed avo, and crumble over the feta. Flip over the other half of the omelette and serve.
