Instructions
Step 1
Peel and finely chop the red onion and garlic. Wash the broccoli and cut it into small florets. Peel and slice the stem as well.
Step 2
Cut the chicken into strips.
Step 3
Bring water to a boil for the noodles. Cook the noodles for about 3–5 minutes. Drain and mix with a little oil.
Step 4
Heat some oil in a pan. Add the chicken and fry for about 4–5 minutes, stirring.
Step 5
Add the onion, garlic, and broccoli to the pan and continue frying for a couple of minutes. Season with salt, black pepper, and curry paste.
Step 6
Pour in the coconut milk, rinse the can with water, and add that too. Season with soy sauce. Bring to a boil and simmer for about 5–7 minutes, until the broccoli is tender.
Step 7
Grate in the zest of half a lime and squeeze in the juice.
Step 8
Serve the chicken curry with the noodles.
