Instructions

Step 1
Roll up and tie pork belly with kitchen twine. Salt and pepper it and sear it in hot oil in a dutch oven or heavy soup pot on medium heat.
Step 2
Clean dirt from the middle of each leek throughly with water. Alternatively you could slice it first in half moons and then wash it throughly. Grate ginger next. I like to freeze all my ginger then grate it frozen. Works much better in my opinion. Mince garlic and add all 3 to soup pot to the hot oil.
Step 3
Turn fire to low and add all 3 ingredients to the soup pot. While thats sautéing muttle 3 tablespoons of Miso paste in a quart jar with a little hot water till smooth and diluted. Fill the rest of the jar with hot water. Add to soup pot being careful that the oil doesn't splatter. Fill jar 3 times more with just water and add to soup.
Step 4
Add the 4 packets of dashi and 2 tablespoons of soy sauce and the mushrooms. Add salt if needed. Turn fire to simmer for 1 hour.
Step 5
In seperate pot boil water. Add ramen noodles and boil according to package directions.
Step 6
Remove pork and slice somewhat thin. Serve with drained ramen noodles in bowls toped with pork slices, soup broth and goodies. Garnish with diced green onion. Enjoy.
