Soup Series Part 10. Japanese A Thousand Leaves Hotpot (also known as Mille-Feuille Nabe) is a dish that is sure to impress because of its beautiful presentation and it’s deliciousness! However, it’s surprisingly simple to make. Fun fact: In French, mille-feuille means “a thousand leaves” and is usually referred to the puff pastry dessert. Of course, the leaves here are layers of pork and Napa cabbage. Also, nabe means hotpot in Japanese.

Ingredients

8 leavesnapa cabbage
0.75 lbpork
very thin cut, or beef
5 ozbeech mushrooms
4 cupschicken broth
or dashi, traditional
2 Tbsrice wine
1 tspfish sauce
Salt
white pepper
to taste
2green onions

Instructions
Step 1
Wash & drain 8 leaves of Napa cabbage. Optional: Dry Napa cabbage leaves with a paper towel.
Step 2
Layer 3 pieces of thinly sliced pork on top of a Napa cabbage leave, overlapping the pork slightly.
Step 3
Layer a Napa cabbage leave on top of the pork.
Step 4
Complete the stack by repeating the layering process till you have 3 layers of pork and a total of 4 layers of Napa cabbage leaves. The lowest and top layer should be Napa cabbage leaves.
Step 5
Repeat and make 1 more stack of Napa cabbage and pork. This recipe will make you 2 stacks.
Step 6
Cut the stack of Napa cabbage leaves and pork into 4 equal pieces, about 2” in length.
Step 7
Pack the cut layered Napa cabbage and pork into the pot, starting from the outer edge, with cut-side facing up.
Step 8
Fill the center with mushrooms.
Step 9
Pour chicken broth into the pot.
Step 10
Season broth with rice wine, fish sauce, salt & white pepper.
Step 11
Bring the pot to a boil over medium high heat. Cover and reduce heat to medium low and simmer for 7 minutes or until everything is fully cooked through.
Step 12
Top with green onions. Enjoy with dipping sauce!
