Ingredients
6 servings
½ cupsundried tomatoes
in oil
1 lbItalian sausage
mild or spicy
0.5white onion
finely diced
1red bell pepper
diced
3cloves garlic
minced
6 cupschicken broth
2 tspitalian seasoning
1 tspcrushed red pepper flakes
1 tspkosher salt
¾ cupdried pasta
l'm using gluten-free pasta
¾ cupheavy cream
or coconut milk
⅓ cupfresh basil
chopped
¾ cupparmesan cheese
freshly grated
sundried tomatoes
slice into pieces and set aside

1/2 cup sundried tomatoes, in oil o

1 lb mild or spicy Italian sausage
Step 6
1/2 white onion, finely diced

1 red bell pepper, diced
Step 8
3 cloves garlic, minced
Step 9
6 cups chicken broth
Step 10
2 tsp Italian seasoning
Step 11
1 tsp crushed red pepper flakes

1 tsp kosher salt

3/4 cup dried pasta of choice (l'm using gluten-free pasta)

3/4 cup heavy cream or coconut milk

1/3 cup fresh basil, chopped

3/4 cup parmesan cheese, freshly grated

First, slice the sundried tomatoes into pieces and set aside.
Step 18
Chop the onion, bell pepper, and mince your onion. Use 2 tb of the oil from the sundried tomato jar and add it to a large pot over medium heat. Once the pot is hot, add the sausage.

Mash into smaller pieces and once almost cooked through, add the onion, pepper, and garlic. Stir for 4-5 minutes until the veggies have softened then add in the chicken broth, sun-dried tomatoes, italian seasoning, red pepper flakes, and salt. Stir and bring to a gentle simmer then add in the pasta and let cook for 4-5 minutes, stirring, then reduce heat to low and add the heavy cream, spinach, and basil, stirring until fully incorporated and the spinach has

Let cook for 3-4 more minutes or until the pasta is al dente.

Remove from heat and stir in the parmesan cheese. Divide into bowls and serve with more parmesan cheese on top.
