Oatmeal Blueberry Muffins with Brown Sugar Oatmeal Streusel

Ingredients

1 cupoats
1 ¼ cupall purpose flour
¾ cupsugar
1 tspbaking powder
1 tspbaking soda
½ tspsalt
1 tspcinnamon
1 cupmilk
¼ cupunsalted butter
melted
2eggs
2 Tbspmaple syrup
1 tspvanilla extract
1 cupfresh blueberries
½ cupbrown sugar
¼ cupall purpose flour
¼ cupoats
¼ cupbutter
chilled and cut into pea-sized pieces
1 tspvanilla extract
¼ tspsalt
Instructions
Step 1
Preheat oven to 400 degrees F and line a muffin tin with trays.
Step 2
In a medium mixing bowl combine oats, flour, sugar, baking soda, baking powder, salt, and cinnamon. Set aside.
Step 3
In a large mixing bowl, combine milk, butter, eggs, maple syrup, and vanilla. Add oat and flour mixture to wet ingredients one cup at a time, folding gently fly until all dry ingredients are incorporated into wet. Once combined add blueberries and fold in until just combined. Do not overmix.
Step 4
In a separate bowl mix the streusel topping. Add brown sugar, flour, oats, chilled butter, salt, and vanilla.
Step 5
Spoon muffin mixture into lined muffin tray and fill 2/3 full, then top mixture with each with 2 tbsp of streusel mixture.
Step 6
Place in preheated oven for 20-25 minutes or until golden brown and toothpick comes out clean. Cool for about 20 minutes and remove from muffin tin. Serve and enjoy.
