Instructions

Step 1
Prepare the Sauce: In a small bowl, whisk together the soy sauce, sriracha, honey, sesame oil, grated ginger, and minced garlic. Set aside.
Step 2
Sear the Turkey: Heat a wok or large skillet over a medium-high heat with a teaspoon of oil. Add the ground turkey. Cook until browned and cooked through, breaking it into small crumbles.
Step 3
Sauté Vegetables: Add the 80g of broccoli and the 100g of mixed bell peppers to the pan. Stir fry for 3–4 minutes until the vegetables are tender but still have a snap.
Step 4
Glaze: Pour the Sauce over the turkey and vegetable mixture. Mix well.
Step 5
Flash cook the zoodles: You can serve the stir fry over raw zoodles for extra crunch, or toss the 200g of zoodles into the pan for 30–60 seconds just to warm them through. Avoid overcooking them, as they release water quickly.
Step 6
Plate and Garnish: Arrange the stir fry on one side of a white plate and the zoodles on the other. Top generously with fresh chopped parsley and a pinch of red pepper flakes if you want extra kick.
