Instructions

Step 1
Prepare the Big Mac Sauce: In a small bowl, whisk together the Greek yogurt, light mayonnaise, chopped pickles, sugar-free ketchup, yellow mustard, rice vinegar, garlic powder, onion powder, and black pepper. Set aside in the fridge to let the flavors meld.
Step 2
Prep the Beef: Divide the lean ground beef into 8 equal portions. Roll each portion into a small ball.
Step 3
Smash the Tacos: Heat a large skillet or griddle over medium-high heat and lightly spray with nonstick cooking spray. Place a beef ball onto a tortilla and press it flat until it covers most of the tortilla. Season the beef side with salt, black pepper, and garlic powder.
Step 4
Cook the Tacos: Place the tortillas beef-side down onto the hot skillet. Cook for 2 to 3 minutes until the beef is browned and cooked through. Flip the taco over so the tortilla side is down.
Step 5
Melt the Cheese: Turn the heat to medium-low. Place half a slice of cheese on top of the beef on each taco. Cover the skillet for about 1 minute until the cheese is melted and the tortilla is slightly crispy.
Step 6
Assemble the Tacos: Remove the tacos from the skillet. Top each one with shredded lettuce, diced onions, pickle slices, and a generous drizzle of the homemade Big Mac sauce.
