Instructions

Step 1
Preheat the oven to 200°C.

Cut the zucchini, pepper, and onion into bite-sized pieces.

Place them in a small baking dish and drizzle with olive oil.

Season with salt, pepper, and sprinkle with oregano.

Crumble the feta cheese on top.

Bake for 20–25 minutes, until the vegetables are tender and the feta is lightly browned.

Delicious on its own, but even better with a slice of toasted bread or pita.

Today’s random twist: if you don’t have zucchini, you can use mushrooms, tomatoes, or even broccoli instead. The oven won’t complain.
