Smash the cucumbers with the side of a knife, rolling pin, or bottom of a cup, then cut into bite-size chunks.
Sprinkle with a little salt and let sit for 5–10 minutes. Drain off extra water.
Mix together soy sauce, vinegar, sesame oil, sugar, garlic, and chili oil.
Toss cucumbers with the sauce and cilantro.
Let it sit for 5 minutes if you can — it gets better as it absorbs the dressing.
Best ratio: salty + tangy + garlicky + sesame, with cilantro added right before serving so it stays bright.
