Instructions

Step 1
1. Toast the buckwheat (optional but recommended) If using raw buckwheat groats, toast them in a dry skillet or bake at 160°C (325°F) for 8–10 minutes, stirring once, until lightly golden and fragrant. Let cool completely.
Step 2
2. Prepare the dates. If using regular dates, soak them in hot water for 15–20 minutes. If using Medjool dates, soak for 10 minutes if they're firm. If they're already soft, you can skip soaking. Drain, reserving a little soaking water.
Step 3
3. Mix the dry ingredients. In a large bowl, combine: Buckwheat, Protein powder, Hemp seeds, Pumpkin seeds, Sunflower seeds, Ground flaxseed, Cinnamon, Sea salt.
Step 4
4. Make the binder. Blend together until smooth: Tahini, Maple syrup, Melted coconut oil, Softened dates. If needed, add 1–3 tablespoons of the reserved soaking water until the mixture blends into a thick, smooth paste similar to caramel.
Step 5
5. Combine. Pour the binder over the dry ingredients. Mix thoroughly until every piece of buckwheat and every seed is coated. The mixture should feel sticky and hold together when squeezed. If it seems dry, add 1 tablespoon warm water at a time.
Step 6
6. Press and bake. Line an 8 × 8-inch (20 × 20 cm) pan with parchment paper. Transfer the mixture to the pan and press it down very firmly, especially into the corners, using the bottom of a measuring cup or glass. Bake at 160°C (325°F) for 20–25 minutes, just until the edges begin to turn lightly golden. Do not overbake, as this will dry out the bars.

Texture Tips

Step 7
Chewier: Add 2–3 extra regular dates or 1 extra tablespoon of tahini.
Step 8
Crunchier: Toast the buckwheat for a few extra minutes.
Step 9
Higher protein: Increase the protein powder to ⅔ cup and add 1–2 tablespoons of warm water if the mixture becomes too dry.
Step 10
Less sweet: Reduce the maple syrup to ¼ cup, but keep the full amount of dates to maintain chewiness.

Storage

Step 11
Refrigerator: Up to 1 week in an airtight container.
Step 12
