Instructions
Step 1
Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions (usually boiling with about 400ml of water). Fluff with a fork and set aside.
Step 2
Heat the sesame oil in a large wok or skillet over medium-high heat.
Step 3
Add the extra-lean ground beef (or sliced flank steak). Break it apart and cook until browned and cooked through (about 5–7 minutes).
Step 4
Add the sliced bell peppers and onions to the skillet with the beef. Sauté for another 4–5 minutes until the vegetables are tender-crisp but still have a slight crunch.
Step 5
Pour the teriyaki sauce over the beef and vegetables, stirring well to coat everything evenly. Reduce the heat to low and let it simmer for 2 minutes so the sauce thickens and the flavors lock in.
Step 6
Set up 4 meal prep containers. Divide the cooked jasmine rice evenly, then top with the beef and vegetable stir-fry. Let the meals cool completely before covering and storing in the fridge.
