Ingredients
3 servings
3 cupsRolled oats
old-fashioned, certified gluten-free if needed
2 TbspChia seeds
3 cupsmilk
or 2 cups milk and 1 cup Greek yogurt for a creamier consistency
6 TbspPeanut butter
6 TbspCocoa powder
unsweetened
3 tsphoney
2 tspvanilla extract
sea salt
chocolate chips
Optional toppings
peanuts
chopped, or sliced strawberries
Instructions
Step 1
In a mason jar or airtight container, combine all the dry and wet ingredients.
Step 2
Stir thoroughly until the peanut butter is completely dispersed and no clumps of cocoa or chia remain. (If your peanut butter is thick, microwaving it for 10-15 seconds before mixing makes it easier to incorporate).
Step 3
Cover with a lid and place in the refrigerator for at least 4 hours, or ideally overnight to allow the oats and chia seeds to absorb the liquid and thicken.
Step 4
Give it a good stir in the morning. If it's too thick, add a splash of milk. Add your favorite toppings.
