Ingredients

extra virgin olive oil
1shallot
medium, chopped
2 tspitalian seasoning
2 pinchescrushed red pepper flakes
or more to taste
2cloves garlic
minced
24 ozcherry tomatoes
0.5 poundpasta
¼ cupvodka
1 Tbspsodium citrate
optional
1 ½ tablespoonssalted butter
½ cupParmesan cheese
shaved, plus more for serving
½ cuphalf and half
¼ cupfresh basil
roughly chopped
Instructions
Step 1
Saute shallot in a large skillet with olive oil for 1 minute and watch that they do not burn during this process. They will be cooking for awhile with the cherry tomatoes!
Step 2
Add Italian seasoning and red pepper flakes, sauteing for a minute to allow spices to bloom. Add garlic and saute until fragrant.
Step 3
Add cherry tomatoes to pan and cook on medium heat until the tomatoes begin to burst and can easily be smashed with a spoon.
Step 4
Meanwhile, place a large, heavily salted pot of water on to boil.
Step 5
Remove about half of the cherry tomatoes and blend until smooth, return to pan.
Step 6
When water boils, cook according to package directions.
Step 7
Meanwhile, add the vodka and stir in the sodium citrate, if using. (The sodium citrate helps the cheese not become stringy). Simmer while pasta boils.
Step 8
A couple of minutes before the pasta is finished, stir in butter and Parmesan. Blend well until both melt into sauce.
Step 9
Drain parts, reserving 1/4 cup pasta and add water to sauce. Remove from heat and stir in half and half.
Step 10
Stir in pasta. Tear basil and serve on top of pasta.
