Ingredients

4 cupsrice
cooked, day old or cooked, cooled, and refrigerated for 1 to 2 hours
3eggs
beaten
½ cupcarrots
diced
½ cuppeas
3scallions
greens only sliced
0.5onion
medium, diced
4cloves garlic
minced
Sauce
2 ½ tablespoonssoy sauce
2 tablespoonsoyster sauce
2 tablespoonschinese cooking wine
can use dry sherry or mirin
Chicken
350gchicken
boneless, skinless
¼ teaspoonsalt
½ teaspoonchicken bouillon
oil for cooking
1 teaspoonsred
if chili flakes if you like heat
Instructions
Step 1
Prep all ingredients, season chicken, create sauce, chop veggies, whisk eggs.
Step 2
Heat up a large wok or pan. Add a little oil, then the chicken. Stir fry on high heat until the chicken is browned and cooked through. Remove and set aside.
Step 3
Scramble the eggs in the pan. Remove and set aside.
Step 4
Add more oil if needed, then add the onions and garlic. Stir fry for 1 to 2 minutes before adding carrots and peas. Stir fry for a couple minutes.
Step 5
Season with a little chicken bouillon and chili flakes if you like heat.
Step 6
Add rice, chicken, eggs and sauce. Mix well
Step 7
Spread rice across the bottom of the pan and let it sit for a minute or 2 then add scallions.
