BREAKFAST - Blueberry-Lemon Protein Quinoa Oats

Tiffany's Container Add to one container Cooked oats: amount equivalent to ~¼ cup dry oats Cooked quinoa: ¼ cup (about 45–50g) Naked Pea: 3 TBS Blueberries: ¼–⅓ cup Almond butter: ~2 tsp Chia seeds: ½–1 tsp Lemon zest ½ tsp vanilla Cinnamon Pinch sea salt Then add unsweetened almond milk when you eat it, rather than during meal prep. Start with about ¼ cup and add more until you get the consistency you like. Instructions

Step 1
Step 1 — Cook the quinoa Cook plain quinoa according to the package directions using water only. Don't add oil. Once cooked, spread it on a plate or shallow container to cool, then refrigerate.
Step 2
Step 2 — Cook the oats separately Cook certified GF rolled oats according to the package directions, again using water rather than almond milk. This gives us much better control over the final macros. Cool the cooked oats and refrigerate separately.
Step 3
How to assemble 3 days at once Set six containers on the counter: 3 Tiffany + 3 Bob. Put your cooked oats on one side of you and cooked quinoa on the other. For each Tiffany container, add your measured cooked oat equivalent + ~45–50g cooked quinoa. For each Bob container, add his cooked oat equivalent + ~90g cooked quinoa. Then add Naked Pea to each container, followed by blueberries. Don't stir everything together yet. Add chia and almond butter on top. Finish with a generous amount of fresh lemon zest, cinnamon and a tiny pinch of salt. Cover and refrigerate. In the morning Add a splash of unsweetened almond milk. Microwave gently if you want it warm, then stir thoroughly. Add more almond milk until creamy. I actually prefer adding the Naked Pea after reheating. If you're willing to do that one small step in the morning, put everything except the protein powder in the meal-prep container. After heating, mix the Naked Pea with a few tablespoons of almond milk to make a smooth paste and stir that into the warm oats/quinoa. Then add vanilla and a little extra fresh lemon zest. That should give you a much creamier texture and avoid the cooked-pea-protein taste. Even easier: prep the protein separately For your containers, make three little portions of ~25g Naked Pea. For Bob's, make three portions of ~30g Naked Pea. Then your morning routine is simply: Heat container → mix protein with almond milk → stir it in → eat.
