Ingredients

400gsweet potatoes
medium
250glean minced beef 5% fat
1onion
finely chopped
2garlic cloves

1 tspcumin
1 tsppaprika
½ tsporegano

3tomatoes
ripe, finely chopped
0.5red onion
finely chopped
fresh coriander
chopped
0.5lime
Juice of, or lemon
1avocado
ripe, diced
salad leaves

Instructions
Step 1
Heat oven to 200°C (fan 180°C).
Step 2
Scrub the sweet potatoes, prick with a fork.
Step 3
Place on a baking tray and bake for 40–45 minutes until soft (a knife should slide in easily).
Step 4
Make the salsa: Chop the tomatoes and red onion into small cubes. Chop the coriander. Add to a bowl with the lime juice, salt and pepper. Mix well and set aside.
Step 5
Cook the mince: Heat 1 tsp olive oil in a pan. Add the chopped onion and cook for 3–4 minutes until soft. Add the garlic and cook for 1 minute. Add the mince and cook until browned. Stir in cumin, paprika, oregano (if using), salt and pepper. Simmer for 5 minutes.
Step 6
Prepare the toppings: Cut the avocado into cubes. Have the salsa ready. Wash and prepare any salad leaves if using.
Step 7
Assemble: Cut the cooked sweet potatoes in half lengthways and gently open them up. Spoon over the mince. Top with avocado, salsa and a sprinkle of coriander.
Step 8
Serve immediately with a side salad or extra veg. Add a squeeze of lime if you like.
