Ingredients

2 x 400gtins cannellini beans
or chickpeas, drained and rinsed
250gcherry tomatoes
halved
1cucumber
chopped
1red pepper
chopped
1yellow pepper
chopped
0.5red onion
thinly sliced
100gpitted olives
black and/or green, halved
100gfeta cheese crumbled
fresh parsley
or basil, chopped
4 Tbspextra virgin olive oil
For the dressing
2 Tbspred wine vinegar

Instructions
Step 1
Prepare the vegetables – halve the cherry tomatoes, chop the cucumber and peppers, and thinly slice the red onion. Drain and rinse the beans.
Step 2
Make the dressing – in a small bowl whisk together the olive oil, vinegar, Dijon mustard (if using), minced garlic, oregano, salt and pepper.
Step 3
Combine – in a large bowl add the beans, tomatoes, cucumber, peppers, red onion and olives.
Step 4
Dress – pour over the dressing and gently toss everything together.
Step 5
Add the feta – sprinkle over the crumbled feta and fresh herbs.
Step 6
Taste and adjust – add a little more salt, pepper or vinegar if needed. Serve immediately or chill for 30 minutes to let the flavours develop.
