Tortillas: You can use store bought or make your own! This is how I make mine.
Corn Salsa:

0.25red onion

4 cobscorn
washed and dried
0.5jalapeño
chopped
2 Tbscilantro

juice of, we will use the other half in the guac

on the corn and place on your pan, Cook over high heat until color starts to develop, Rotate to evenly char all sides, Remove from your pan and cut the kernels off, Place in a bowl, Add in the remaining ingredients and mix

Instructions
Step 1
Tortillas: In a bowl mix all 3 ingredients until a dough forms. Once a dough ball forms cover the dough directly (Not the bowl, the dough itself. This prevents it from drying out) Set aside for 1 hour at room temperature. Heat your cast iron over medium heat and lightly brush with a neutral oil (I used avocado oil). Separate your dough into 14 pieces and roll into balls. Use a tortilla press to roll out your tortillas. If you don’t have a press you can use a rolling pin. Place each tortilla onto your pan until you see the edges start to set (approximately 40 seconds). Flip your tortillas and cook another 40 seconds. Flip one last time ending on the side you started on. Cook for 20 seconds pressing in the center with your spatula. The tortillas will inflate. Remove from pan and store in a plate lined with paper towel or a kitchen towel to keep warm.
Step 2
Corn Salsa: Start by brushing neutral oil on the corn and place on your pan. Cook over high heat until color starts to develop. Rotate to evenly char all sides. Remove from your pan and cut the kernels off. Place in a bowl. Add in the remaining ingredients and mix.
Step 3
Guac: Combine all ingredients and mix until desired consistency is achieved. I personally like to wear a glove and mix/mash it with my hand
Step 4
Chicken: Combine all seasonings in a bowl and set aside. In the same pan we have used, preheat it once more over medium heat. Add in some neutral cooking oil, again I used avocado oil. On a cutting board spread out your chicken and evenly sprinkle your seasonings. Add your chicken to your hot pan and cook on each side for 5 minutes or until the chicken is fully cooked. Remove from pan and chop into bite sized pieces.
Step 5
Making the tacos: Start with your tortillas, spread a bit of the guac into the center of your tortilla. Top with a scoop of chicken, followed by a drizzle of sour cream. Top with the corn salsa and a sprinkle of cotija cheese. Serve immediately. This makes 14 mini tacos.
