Instructions

Step 1
1. Place chicken breasts in the crock pot. Add drained beans, green chiles, diced onion, garlic, chicken broth, and all dry seasonings. Stir gently.
Step 2
2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken reaches an internal temperature of 165°F and shreds easily.
Step 3
3. Remove chicken and shred with two forks.
Step 4
4. Mash some of the beans directly in the crock pot with a potato masher to thicken the chili. For an even creamier texture, blend about 1 1/2 cups of beans with a little broth and return to the pot.
Step 5
5. Add cubed reduced-fat cream cheese and evaporated milk. Return shredded chicken to the crock pot. Cover and cook on HIGH for another 15-25 minutes, stirring occasionally until the cheese melts and everything is creamy.
Step 6
6. Stir in lime juice. Taste and adjust seasonings. Serve hot with optional shredded cheese, jalapeños, cilantro, or tortilla chips.
