Trail Chili

3 steps
Prep:20minCook:50min
A hearty, rustic beef chili inspired by the campfire cooking traditions of the American West. Packed with seasoned ground beef, tender kidney beans, tomatoes, peppers, and aromatic spices, this rich and satisfying chili develops deep, savory flavors as it slowly simmers. A splash of beer adds complexity, while a touch of brown sugar balances the acidity of the tomatoes. Perfect for chilly evenings around the campfire, family dinners, or game day gatherings. Serve with shredded cheddar, sour cream, and warm cornbread for the ultimate comfort food.

Instructions

Step 1
Step 1: Season and Brown the Beef: In a large mixing bowl, combine 2 pounds lean ground beef with 1½ tablespoons chili powder, mixing thoroughly to distribute the seasoning. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the seasoned beef, 1 diced medium onion, 1 seeded and finely diced jalapeño, and 4 cloves minced garlic. Cook for approximately 7–10 minutes, breaking the beef into small pieces and stirring occasionally until browned and the vegetables begin to soften. Drain excess fat if necessary.
Step 2
Step 2: Combine and Simmer: Add 1 diced green bell pepper, the remaining 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 can (14.5 oz) crushed tomatoes, 1 can (19 oz) drained and rinsed kidney beans, 1 can (14.5 oz) diced tomatoes with juices, 1½ cups beef broth, 1 tablespoon tomato paste, and 1 tablespoon brown sugar (optional). Stir thoroughly until combined, then bring to a gentle boil. Reduce the heat to low and simmer uncovered for 45–60 minutes, stirring occasionally, until the chili reaches your desired thickness.
Step 3
Step 3: Season and Serve: Taste the chili and adjust with salt, black pepper, or additional chili powder as desired. If the chili is too thin, continue simmering uncovered until it thickens. Ladle into bowls and serve hot with your favorite toppings, such as freshly shredded cheddar cheese, sour cream, diced green onions, sliced jalapeños, or fresh cilantro. Serve alongside warm cornbread or crusty bread for a complete meal.
