Step 1
Heat olive oil (preferably in a dutch oven) over medium-high heat and place the stew meat in the dutch oven.
Step 2
Dice tomatoes, onions, jalapenos, and bell peppers and chop cilantro
Step 3
Reduce the heat to medium, add the spices and stir in to the meat & juices.
Step 4
Add the rest of the ingredients and stir well.
Step 5
Set medium-low and stir often (i.e. every 10 minutes) until meat is tender (about 1 hour). Leave covered when not stirring.
