Ingredients
2 servings
10mlolive oil
1onion
finely diced
10gfresh ginger
finely grated
2garlic clove
finely grated
2 ½ tspground cumin
2 ½ tspground garam masala
400gdried red lentils
rinsed
4 cupsvegetable stock
⅔ cupcoconut milk tinned
80gbaby spinach leaves
salt
to taste
pepper
to taste
⅓ cupGreek yogurt
or dairy-free alternative
80gfresh coriander
leaves picked
Instructions
Step 1
Heat oil in a medium non-stick saucepan over medium heat. Add onion and sauté for 5 minutes until soft.
Step 2
Add ginger, garlic and spices and cook for a further minute until fragrant.
Step 3
Add lentils, stock and coconut milk and simmer for 20 minutes until the lentils are tender and dal has thickened. Stir through spinach leaves until wilted and adjust seasoning.
Step 4
Divide dal between serving bowls, top with yogurt and scatter over coriander to serve.
