1. Preheat oven to 425. Place 1 piece of chicken into a gallon-sized zip top bag and pound to an even thickness using a meat mallet. 2. Wrap each piece of chicken with 2 slices of bacon, using toothpicks to secure bacon if necessary. 3. In a large nonstick skillet cook chicken 3-4 minutes per side or until bacon starts to crisp. Place chicken on a greased wire rack placed on top of a foil lined baking sheet. 4. Stir together pepper jelly and mustard. Reserve 1/2 of cup. Brush remaining jelly mixture over chicken. Bake 15-25 minutes or until bacon is crisp and chicken reaches 165 degrees F. 5. Serve chicken with reserved jelly mixture.
