Makes 6-8 servings. Use whatever potatoes, onions, beans, and veggies you have on hand. This is kind of an "everything but the kitchen sink" stew.

3 cupspinto beans
cooked, no salt
1onion
diced
garlic
to taste
4russet potatoes
cubed
8 ozspinach
or kale fresh or frozen
14 ozdiced tomatoes
no salt, fire roasted if you can find it
3 cupsfrozen broccoli cauliflower carrots mix
3chipotles in adobo sauce
chopped
1 cantomato soup
or salt free sauce
6 cupsvegetable stock
no salt
cajun seasoning
to taste
paprika
to taste
black pepper
to taste
onion powder
to taste
Italian herbs
dried, to taste
Instructions
Step 1
Boil the potatoes until they're cooked through, then throw everything into a slow cooker and let it go for 4 hours on high or 6 hours on low. Serve with a couple slices of nice crusty bread.
