Step 1
1. Sprinkle the spiralised zucchini with sea salt and set aside while you make the soup. If you're using konjac noodles, drain the water out, then place them in boiling water for 2 minutes. Drain.
Step 2
2. Combine the chilli, laksa paste and coconut milk in a medium saucepan and bring to a simmer. Add the tofu and cook over low heat for 6 minutes or until the tofu is cooked through. Add the vegetables and cook for another 3 minutes or until tender.
Step 3
3. Add the spiralised zucchini or the konjac noodles to the pan and bring the soup back to a simmer. Taste and season. Ladle the soup into four deep bowls and then top with basil leaves to serve.
