1 ¼ Tbspgarlic paste
1 ¼ Tbspginger paste
1 Tbspcooking oil
2 Tbspunsalted butter

3cinnamon sticks
1mace blade
6cardamoms
3green chilies
2 cupsbasmati rice

Instructions
Step 1
1. Coat chicken pieces with lime juice, salt, turmeric, Kashmiri red chili, garlic, and ginger paste

2. Marinate the chicken for 30 minutes

3. In a large pot, add unsalted butter and stir in thinly sliced onion

4. Saute the onion until light brown

5. Add bay leaves, pepper, cinnamon sticks, mace blade, and cardamoms

6. Saute until onions are brown

7. Add green chilies and soaked basmati rice

8. Pour in hot water

9. Bring to a boil

10. Add a pinch of salt to taste

11. Cover with a lid and cook for 15 minutes on low heat

12. Lightly toast barberries, cashews, and pistachios with ghee in a pan

13. Mix warm milk with a pinch of saffron in a small bowl

14. Pour the saffron milk into the pulao pot

15. Garnish with barberries and nuts

16. Cover with a lid and cook for another 5 minutes on low heat

17. Sprinkle fried onions on top before serving
