Ingredients

1 tablespoonolive oil
1 tablespoonminced garlic
0.5yellow onion
medium, minced
2bell peppers
large, diced
1 lb85% ground beef
3 tablespoonstaco seasoning
homemade
½ cuptomato sauce
2 tablespoonsgreen chiles
1 x 15 ozcan black beans
drained and rinsed
1 cupquick-cooking brown rice

1 ½ cupsbeef broth
any kind
½ cupMexican shredded cheddar cheese
Instructions
Step 1
Start off by partially sauteeing the bell pepper, garlic, and onion in olive oil. The goal here is to get them partially cooked, but not all the way.
Step 2
Move the veggies to one side and add ground beef. Saute until the beef is fully cooked and then mix everything together.
Step 3
Add the rest of the ingredients to the pan and bring to a boil. Then, turn the burner down to low and cover it. Let simmer for 15-20 minutes or until the rice has softened.
