Instructions
Step 1
Peel and cube your yam, then cover with clean water and set aside.
Step 2
In a saucepan, warm some palm oil (make sure it doesn’t get too hot and start to smoke). Add your chopped onions then sauté till fragrant.
Step 3
Using a food processor, pulse the bell and habanero peppers till roughly chopped.
Step 4
Add the pulsed peppers to the pan and sauté for about 7-10 minutes on medium heat.
Step 5
Once the pepper mix is cooked, add the crayfish then drain and add the yam cubes.
Step 6
Add the chicken stock to cover the yams, mix well and adjust the seasoning if necessary. Cook on medium heat for about 10 minutes.
Step 7
Add chopped spinach and cook for another 5 minutes or until the yams are fork tender.
Step 8
Mash some of the yams with the back of a wooden spoon to create a sauce (mash as many as you like).
Step 9
Add a little bit of water if necessary and adjust for seasoning.
Step 10
Cook on low heat for another 5 minutes.
Step 11
Serve and enjoy with protein of choice.
