Instructions
Step 1
Get some mince, season, and fry it up in neutral oil until it's reeeeaaaaaaally crispy, then drain fat with a colander and set aside (this keeps it crispy).
Step 2
Slice garlic, ginger, chillies, and spring onions while that's happening.
Step 3
Throw garlic, ginger and chillies in the pan with some sesame oil until just about cooked (garlic should be golden), then add brown sugar.
Step 4
Throw in some mirin, let this cook off for a few seconds, then throw in oyster sauce, soy sauce, lime zest and juice until it's all combined.
Step 5
Then throw the meat back in, take off the heat and throw in some spring onions and mix it all together.
Step 6
Serve in lettuce cups, I make them as I go.
