Guyanese Catfish Curry

Instructions

Step 1
Clean and wash Catfish with lemons and salt.
Step 2
Combine Curry Powder, Cumin/Gerra Powder, Turmeric Powder, Salt, Black Pepper, Curry Leaves, minced Garlic with about 3 tsp of oil. Mix to create a paste, add more oil, if needed.
Step 3
In a large sauté pan, heat 5 tsp of oil on medium heat, add sliced onions and Wiri Wiri / Habanero peppers, cook until onions are translucent, for about 3 minutes.

Step 4
Add prepared curry paste from step 2 to onions and peppers, cook for another 3-5 minutes on medium heat. Be sure to stir frequently.
Step 5
Add Catfish and stir to coat the fish in the curry mixture. Cook until the natural water in the fish has cooked out, about 5 minutes.
Step 6
Add Tomatoes, Sliced Green Mangoes and Okras. Cook for about 5 minutes.
Step 7
Add 2 Cups of Water, a little more or less, depending on how much gravy you want.
Step 8
Cover and cook for 15-25 minutes or desired doneness.
Step 9
Garnish with sliced Scallions when curry is done.
Step 10
Serve with white rice or roti. Enjoy!
