1onion
chopped

3carrots
chopped

3celery stalks
chopped

½ Tbspgarlic
finely chopped or 1/4 tsp garlic powder

2 Tbspvegetable oil

2cans hominy
or corn, optional

1can chicken

4 cupswater

1 tspcayenne
or jalapeños, seeds removed and finely chopped, Optional

½ tspchili powder
optional

1 tsporegano
optional

½ tspsalt

¼ tsppepper
Instructions
Step 1
In medium size pot, Brown onion, carrots, celery, and garlic and vegetable oil over medium heat for 10 minutes.
Step 2
Add hominy, chicken, and water. If using Cayenne pepper, jalapeno chilies, chili powder, or oregano add also
Step 3
Mix well
Step 4
Bring pot to boil. Lower heat and cook for about 10 minutes
