Instructions

Step 1
Make General Tso Sauce ahead of time. (SEE RECIPE IN MENU) You can also buy store bought. This can be used As a dipping sauce or to mix in with chicken for extra flavor. THIS STEP CAN BE OMITTED DEPENDING ON YOUR TASTES FOR THE NIGHT!
Step 2
Clean chicken with vinegar and lemon and marinate (over night, if possible). Cube the chicken into small pieces. Season with salt, black pepper, garlic powder and the (smoked) paprika.
Step 3
Preheat a large frying pan over medium/high heat and add a splash of oil. Add the diced onion, season and sauté, then add chicken. Fry for 5 to 7 minutes, until the chicken is cooked through. (You can add your General Tso Sauce, if you’d like). Add and toss in pan and let chicken and sauce blend together. Transfer the chicken into a large mixing bowl.
Step 4
In the mixing bowl, add the coleslaw mix (SEE RECIPE IN MENU), cubed or sliced avocado, cheese, lime juice, Worcestershire, and seasonings. Also add a splash of General Tso Sauce (To your liking). Use a spatula or a gloved hand to combine all the ingredients and chicken together.
Step 5
To assemble the egg rolls, place a generous amount of the filling onto the egg roll wrapper, in the center. Fold over the bottom first, then the sides. Then continue rolling. Moisten the edges of the wrapper with water or egg wash to seal the dough, then gently finish rolling the egg roll.
Step 6
Preheat 6 to 8 cups of canola or vegetable oil in a medium sized sauce pot to 325F to 350F (160C-180C) OR deep-fryer. The oil needs to be super hot; use a thermometer. Fry the egg rolls 3 to 4 at a time for 3 to 4 minutes, until they are a rich golden brown color. Remove them gently using kitchen tongs and place onto a tray lined with paper towels to absorb the excess oil. YOU CAN ALSO Bake them at 375° for 15 minutes, then turn over and bake for another 10 minutes. ENJOY!
Step 7
Serve warm with the remaining General Tso Sauce as a dipping sauce.
