1 lbchicken thighs
skinless/boneless Sauce
3 Tbspbutter
4cloves garlic
minced
3 Tbspdry red wine
you can sub this with chicken broth too
1 cupheavy cream
0.5 Cupunsweetened almond milk
¼ cupchicken broth
1 cupparmesan cheese grated
1 TbspDijon mustard
1 tsprosemary
½ tspsalt
½ tspthyme
¼ tspcayenne pepper

Instructions
Step 1
Preheat the oven to 400F.
Step 2
Season the chicken thighs with 1⁄4 tsp of salt, black pepper, garlic powder, and paprika.
Step 3
2. Then in a large skillet or pan heat the olive oil over medium-high heat. Add the thighs into the pan to sear for 5 mins on each side. Remove the thighs to a clean plate and chop them into bitesize pieces and set them aside.

3. In the same skillet add in the butter and heat over medium heat. Add in the minced garlic and sauté for 45 seconds.
Step 5
Add in the remaining sauce ingredients and whisk. Once the cheese is melted reduce the heat to a simmer stirring occasionally for 5 mins.
Step 6
Add the chicken and stir. Add in the cauliflower florets, broccoli florets, and spinach and stir.
Step 7
Pour the pan’s contents into a large oven-safe dish. Top with crumbled bacon and bake for 15 mins.
