Ingredients
5 servings
2 Tbspvegetable oil
1kgPork
mix of Belly and Shoulder, cut into bite-sized pieces
2 inchGinger
finely chopped
1 podGarlic cloves
thinly sliced
3 pcsGreen Chillies
slit
2 pcsCayenne Pepper
can substitute with 3 green chillies, thinly sliced
5 pcsOnions
medium sized, cubed
1 ½ TbspSoy sauce
Dark
2 Tbspchilli sauce
Salt
as acquired
2 pcsCapsicum
optional, cubed
1 TbspCorn-flour
1 ½ cupwater
Instructions
Frying the Pork:
Step 1
Heat some oil in a large enough frying pan and fry the pork on medium heat till the fat renders and the meat browns a bit
Step 2
Remove on to a plate and keep aside
Making the Chilli Pork:
Step 3
In the same pan, fry the ginger and garlic (see notes) for a couple of minutes
Step 4
Toss in the green chillies and cayenne peppers and fry for a couple of minutes
Step 5
Add the onions and fry until they turn translucent
Step 6
Add the soy sauce and chilli sauce and give it a good mix until the veggies are coated with the sauce
Step 7
Add the fried pork to the pan and give a good mix
Step 8
Add the capsicum (if using) and give a good mix
Step 9
Fry on medium heat until all pieces are well coated with the sauces
Step 10
Add salt, if needed.
Step 11
Stir the corn-flour into the water and add this mixture to the pan and give a good stir until the dish binds well.
Step 12
Continue to cook until the pork is cooked to your liking
Step 13
Take it off the flame and serve!
