In a blender combine the cumin seefs, coconut, tomatoes and 1/2 cup cooked chickpeas and blend into smooth puree. Add water if needed Heat up skillet and add mustard seeds for about 30 seconds. Stif in the curry & garlic then add the onion and cook for about 5 minutes. Add the turmeric, cayenne and black pepper to the skillet and stir to combine. Add the puree and cook stirring until fragrant (6-8 minutes) Add the tamarind, eggplant, remaining chickpeas, water and salt and mix well. Cover and cook until eggplant is tender (10-12 minutes.
