Ingredients

For the chicken
3chicken breasts
1 tspgarlic powder
½ tspcayenne
1 tspMontreal chicken seasoning
½ tspdried parsley

For the pasta
Instructions
Step 1
Cook the pasta in salted boiling water until al dente. Drain and set aside.
Step 2
To ensure even cooking, pound the chicken breast with a pan or rolling pin until it has a consistent thickness. Season with the spices listed and sear in a hot pan with olive oil for 2-3 minutes on each side until the outside is golden brown. Remove the chicken from the pan once it reaches an internal temperature of around 120 degrees, as it will continue cooking in the sauce.
Step 3
In the same pan, add 1-2 tbsp of oil and sauté the onions, garlic, and sun-dried tomatoes for 2-3 minutes. Add the remaining spices and flour, and cook for an additional 1-2 minutes.
Step 4
Add the half and half cream and spinach, bring the mixture to a boil, then reduce to a medium simmer for 5-6 minutes or until the sauce thickens.
Step 5
Add the pasta water, pecorino cheese, and lemon juice to taste. Bring the sauce to a boil again, then add the chicken back to the pan. Reduce the heat to medium and let simmer for 5 minutes.
Step 6
Serve the chicken and sauce over cooked pasta, and garnish with fresh basil or parsley. Bon appétit !
