Ingredients

1 ½ cupchickpeas
2carrots
2celery sticks
2tomato
2cloves garlic
0.25onion
¾ cupgreek yogurt
1 cupvegetable broth
2 tablespoonscurry powder
1 tablespoonsBalti seasoning
or any Indian seasoning blend
1 tablespoonsTumeric
½ tablespoonssalt
½ tablespoonspepper
1 ½ cupbrown rice
2 tablespoonsolive oil
Instructions
Step 1
Chop carrots, celery and onions into small pieces and sauté with tablespoons of olive oil. Cut top and bottom ends off tomatoes and steam in bowl of water and microwave until softened and skin is easy to peel off, remove skin and chop and add to the sauté mixture. Cook vegetables until softened then add vegetable broth, cooked chickpeas and seasonings. Cook 20 minutes on medium high or until vegetables are tender. Reduce heat to low and add yogurt cook for five minutes and serve with cooked brown rice.
