Instructions
Step 1
Cut the pork loin into thin (less than .5 inch) pieces and use a meat hammer to pound to about .25-inch thickness.
Step 2
In a small bowl, whisk together the eggs and coconut milk. Mix the almond and coconut flours, garlic powder, salt, and pepper in a large bowl or on a plate. Dredge the pork cutlets in the egg mixture, then in the flour mixture. Set aside.
Step 3
In a large skillet over medium- high heat, heat half of the oil.
Step 4
Working in batches if necessary, add the pork cutlets to the skillet and cook for about 4 minutes per side, or until cooked through (golden brown on the outside and an internal temperature of 160°F).
Step 5
Remove and set on a plate to cool.
Step 6
Sprinkle with extra salt if desired.
Step 7
Halve the lemon and squeeze the juice over the cutlets.
Step 8
Slice the other half into wedges.
Step 9
Serve immediately with fresh greens and lemon wedges.
