Ingredients
4 servings
Salad
5 ozgreens
container, any combo of spinach, arugula, butter lettuce, romaine
1 x 15 ozcan chickpeas
drained and rinsed
1green bell pepper
diced
1 cupcucumber
diced
1 cupgrape tomatoes
halved
¼ cupred onion
thinly sliced
¼ cuppitted kalamata olives
sliced
¼ cuppepperoncinis
¼ cupfresh dill
or parsley, optional
Vinaigrette
Instructions
Step 1
Add all the salad ingredients to a large bowl. Set aside.
Step 2
Add all the dressing ingredients to a measuring cup and whisk until well combined. Taste and add more salt for saltiness, or more vinegar for more bite.
Step 3
Add 1-2 Tbsp dressing for each individual salad serving. Toss together and enjoy!
