Ingredients

1 tablespoonsmoked paprika
1 teaspooncumin
½ teaspoongranulated sugar
½ teaspoonkosher salt
⅛ teaspooncayenne pepper
2Japanese eggplants
halved lengthwise
cooking spray
¼ cupplain 2% reduced fat Greek yogurt
2 tablespoonswater
1 ½ teaspoonslemon juice
¼ teaspoonblack pepper
3 tablespoonsfresh parsley
chopped
½ cupfresh plums
chopped, pitted
2 tablespoonsfresh olive oil
Instructions
Step 1
1. Stir together paprika, cumin, sugar, salt and cayenne pepper
Step 2
2. Spray cut sides of eggplant with cooking spray and sprinkle with spice mix
Step 3
3. Heat grill pan over high and coat with cooking spray
Step 4
4. Cook eggplant, cut sides down, 4 to 5 minutes. Turn and cook until tender, 5 to 6 minutes
Step 5
5. Stir together yogurt, water, lemon juice, and black pepper and drizzle over eggplant
Step 6
6. Sprinkle with parsley, plums and olive oil
